The Sandpiper Hotel – St. James, Barbados
We arrived in time for the Manager’s Cocktail Party, held each Wednesday evening. When in the Caribbean there is one drink above all others and that’s rum and their signature Rum Punch was excellent. Barbados has many wonderful restaurants, just a short cab ride from the resort, but we opted to dine at the resort. The first night we enjoyed their West Indian/International Buffet with many locally inspired dishes, following the cocktail party.
The second evening we had a quiet and romantic dinner for two. Soft candlelight with ocean breezes in the open-air dining room creates an informal elegance that is supported by very attentive service. While we had a number of delicious dishes, I’ll never forget the Poached Caribbean Shrimp with Toasted Coconut served with Basmati Rice and Coconut Malibu Cream Sauce that I enjoyed the second evening. It was a dish that spoke to and was reminiscent of this tropical paradise.
