A Dutch Baby with Boozy Strawberries for the Royal Wedding

I prepare many things in my food processor, but the one I would like to share with you today is a Dutch Baby.  If you are not familiar with a Dutch Baby, it is batter that is baked in the oven and puffs up like a popover.  It is almost like a crepe in texture on the bottom and similar to a pancake on the sides.  It will fall as it sits.  Filled with fresh fruit, it is a lovely dish for a brunch.  It is a special dish that is perfect to have with your mother on Mother’s Day.  Fancy pancakes and boozy strawberries?  Who wouldn’t like that?

I made this batter in the smallest bowl of the mixer.  It was a perfect fit.  It whipped up the batter quickly and made a gorgeous Dutch Baby.

Melt your butter in a cast iron skillet.  I prefer to use my Le Creuset skillet.

Pour the batter into the skillet.

The batter puffs up like a popover in the oven when you bake it.

The strawberries were not quite sweet enough for me, so what better way to dress them up than with a teensy bit of Amaretto (well, maybe not so teensy after all)!  A little booze always makes things festive and is perfect for a celebration like a Royal Wedding or Mother’s Day!

Dutch Baby with Strawberries and Amaretto

Ingredients:

For Dutch Baby:
3 large eggs, at room temperature
3/4 cup unbleached, all-purpose flour
3/4 cup whole milk
1 tablespoon sugar
1/2 teaspoon vanilla
pinch salt
3 tablespoons unsalted butter
Sifted confectioner;s sugar, for dusting

For strawberries:
2 quarts fresh strawberries, sliced
1 tablespoon (or more to taste) sugar
4 tablespoons Amaretto (more or less to taste)

Directions:

For Dutch Baby:
Pre-heat oven to 425 degrees.

Mix first five ingredients in a food processor. Process until mixture is smooth and larger in volume, about thirty seconds. Be sure that the flour is mixed in properly.

Heat a 10-inch cast iron skillet over medium-high heat. Melt butter in the pan just until it is no longer foamy. Be sure to not burn the butter. Remove the pan from the heat, pour in the batter and immediately place in the pre-heated oven.

Bake for 15 to 20 minutes, being sure not to burn the sides. (Mine was done in 15 minutes). Remove from the oven. The sides will shrink as it cools.

Top with fresh fruit and dust with confectioner’s sugar. Serve immediately.

For strawberries:
Place sliced strawberries in a large bowl. Sprinkle with sugar. Stir gently to mix. Place in a the refrigerator for at least a half hour, allowing the sugar to bring out the juices in the berries. Add Amaretto to taste. Serve immediately with the Dutch Baby.
