Watermelon Margarita Popsicles for Casual Friday

Hello weekend! How would you like to join me for a cocktail for Casual Friday?
This week’s cocktail comes in popsiscle form. Watermelon Margarita Popsicles are definitely an adult treat. Who wouldn’t enjoy a frosty popsicle on a hot summer evening? Your kids would too, so be sure to stash these away from the little ones.

Adult beverages in frozen form!
Last summer’s Watermelon Martini and Cantaloupe Martini recipes were huge hits and some of my favorite boozy drinks during these warm and toasty times. Why not freeze one of these tasty adult beverages in a cute little plastic container and enjoy them on a stick? 😉
When you are bored with eating slices of watermelon this summer, chop the melon into chunks and give them a whirl in the blender for fresh juice for your cocktails. Be sure to use a Sugar Baby melon if you can find them. They are sweeter and have fewer seeds.

Don't let leftover watermelon go to waste. Make a cocktail!
If you cannot find a Sugar Baby, a seedless watermelon will do. Be sure that your watermelon is sweet and ripe. You may have to adjust the sugar in the margarita recipe depending on the sweetness of your melon.

Watermelon Margarita Popsicles
Ingredients:
5 cups chopped seedless watermelon (Sugar Baby Watermelon is preferred)
2 tablespoons fresh lime juice
2 - 3 tablespoons superfine granulated sugar (taste for sweetness and add additional sugar as necessary)
2 tablespoons Cointreau
1/4 cup silver tequila (I used Patron)
6 (1/2 cup capacity) popsicle molds
Directions:
Purée all ingredients in a blender until smooth, then strain through a fine-mesh sieve into a large measuring cup, pressing on and then discarding solids. Skim off any foam, then pour into molds. Freeze 30 minutes. Insert sticks, then freeze until firm, about 24 hours.

I think just breakfast. We thought we’d grab an early breakfast and then go to Monticello, before it gets too hot.
We looked at the breakfast menu on line and got really excited! Also thinking about touring a winery. I’m so excited!

Take some time to visit the grounds. You definitely want to catch the view from outside the bar at Fossett’s. It overlooks the golf course and rolling hills. The illusion pool is lovely. you can see the original house from that viewing point.

I wouldn’t be allowed to make these because popsicles are Dudette’s territory and telling her she can’t have any; well, you just don’t want to be around that. I love the idea though….adult frozen treats. Heaven. I want to know how you got those popsicles to stand up.
