Mountain Mondays
Hello Monday! Are you ready for another week? This week in particular will be very busy since there will be several events to celebrate. First we have Cinco de Mayo, then the 137th running of the Kentucky Derby and finally Mother’s Day on Sunday. Pheww…I am tired just talking about it! 😉
Since this will be a hectic week, I thought you might appreciate some quiet to start it off properly. We finally spent some time in the mountains of North Carolina this past weekend. Although there are not too many plants and flowers blooming yet, it is definitely greening up and there are signs of Spring everywhere you look.
I will not be posting any recipes for Cinco de Mayo this week, but we sure had fun with it last year, so you might want to check out these recipes:

Yes, it was gorgeous in the mountains, but really nice in Atlanta too. This is my favorite time of year. Roger did play one round of golf with the boys. He was supposed to play Sunday, but we had some things to do around the house.

Our Autumn here (it finally came!) is a nice relief from the eternal summer, and it’s made all the better by being able to look at such lovely spring photos from across the globe. I remember pangs of envy looking at such photos last year, but our summer was so damn long it’s a relief to be able to curl under the covers at night!
No, we didn’t make it back this year as it has been a busy year for us, too! Alexis had our first grandchild the day after Christmas…a little boy named Carter. I’m very busy enjoying my new role as “MiMi”! 🙂
